In lieu of a {recipe of the week} since I've been in Vancouver all week
and life around here is a little crazy with the laundry. Well, that and I
have nothing in my refrigerator worth cooking at the moment. (Its a spaghetti kind of night) I'm sharing
my new favorite snack ... here we come pre pregnancy body!
A thin spread of almond butter (I currently love MaraNatha), a few slices of banana and a drizzle of honey on whole grain toast. This is surprisingly filling and so yummy. I'm REALLY trying to eat healthier and since Anna is basically eating 3 meals and 1-2 snacks I am trying to be more health conscious. I've always been a pretty good eater but eating an entire bag of Cheetos while your dog and baby sit and watch you eat makes you think twice about that decision! This has just enough sweetness to satisfy my sweet tooth so I'm not out running through the DQ drive thru for a blizzard at 3pm either.
If almond butter isn't your thing then I'd recommend checking out Real Simple's article on the Best Nut Butter Spreads. And if you aren't very adventurous this is pretty good over peanut butter too.
